You will need:
- 1 cup half & half
- 4 large egg whites
- 1 whole egg
- 3 teaspoons vanilla extract
- 3 cups flour
- 1 cup sugar
- 1 tablespoon + 1 teaspoon baking powder
- 3/4 teaspoon salt
- 12 tablespoons butter, softened
- 1/2 cup finely diced strawberries
For the Frosting you will need:
- 3 sticks + 2 tablespoons unsalted butter
- 3-1/2 confectioners’ sugar
- 3 tablespoons milk
- 1 tablespoon pure vanilla extract
- Pinch of salt
- Pink food coloring (Or you can use a splash of red)
Directions:
- Preheat oven to 350°F. In a medium bowl, combine and stir the egg whites, whole egg, 1/4 cup half & half, and the vanilla.
- In a separate bowl, combine the dry ingredients.
- Add the butter and remaining 3/4 cup of half & half, and mix for about 2 minutes.
- Pour in the egg/milk mixture.
- Add in strawberries.
- Pour batter into cupcake liners and fill about 2/3 full. Bake for 16 minutes or until toothpick comes out clean when inserted into middle of cupcake.
- Allow cupcakes to cool before frosting. Use 1M Wilton icing tip to match the photo.
