Yum! Cheesy Cauliflower Patties!

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko bread crumbs
1/2 t cayenne pepper – you can use more or less – use it to taste
salt
olive oil

Note: if you like, add about 1/2 cup chopped onion or a few tablespoons of minced garlic. You can also add other herbs that you enjoy: basil, thyme, oregano, etc. Be creative!

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain and mash the cauliflower while it is still warm. Stir  the cheese, eggs, panko, cayenne & salt to taste.

Add olive oil to a griddle or skillet, just coating the bottom, and turn on  medium-high heat. Form the cauliflower mixture into patties about 3 inches across. It’s important that you don’t make them too big or thick. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.
