So, I work at home. All day. Every day. And although working at home theoretically should mean that it’s easier to eat more healthy food, in fact, I find myself just grabbing what’s handy or quick…chips, candy, you know. Junk food.
But recently I decided to whip up some of Gorton’s Simply Bake Salmon in the roasted garlic and butter flavor, and guess what? This makes eating a healthy lunch for me so easy! I really like to incorporate fish into my diet – not only is it delicious, but it’s good for you. But who has time to cook fish for lunch? You do!
For this particular one, I put the salmon over a salad of fresh cucumber, tomato, onion and basil. I added some superb balsamic vinegar that I purchased in Italy, and drizzled with olive oil. After a dash of sea salt, my lunch was ready! And it was delicious! The fish only took 15 minutes in the oven (no babysitting a saute pan!).
