Are You Ready for Swimsuit Season?

If you’re like me, at some point you may want to lose a few pounds, especially now that summer’s coming! But here’s the deal – you want to do this in a healthy way, right? That means no crash diets, no crazy eating only celery, or bananas, or spaghetti squash. You need a balanced diet. For me, I have chosen to create my own plan eating just very lean protein (just chicken and fish for me), fruits and veggies, and boiled eggs or a few roasted almonds. Here’s what I am not eating at all:

  • Bread
  • pasta
  • rice
  • potatoes
  • pasta
  • sweets
  • high sugar vegetables (corn)
  • high sugar fruits (grapes, bananas)
  • soda
  • nothing fried
  • no red meat
  • no pork
  • no cheese or dairy

I am not saying this is right for everyone! But it’s working well for me. For dinner, I have boneless, skinless chicken breast (about 5 oz), sauteed spinach and another veggie. Later for a snack I’ll treat myself to a South Beach Snack Bar – yummy treat for only 100 calories.

My first go-to product is fresh baby spinach. Here’s what I do with it:

I take a full bag of baby spinach and it’s only about 50 calories total. First, spray a pan with cooking spray. When pan is hot, saute some chopped onion until translucent. Add some sliced baby portobello (crimini) mushrooms and saute with the onion. Add some grape tomatoes cut in half, some minced garlic and some fresh basil. Add the entire bag of spinach leaves. Continue tossing the mixture until the spinach has cooked down (about 2 minutes or so). This makes a nice full plate of sauteed spinach for about 100 calories or less!
